My menu features highly innovative, big flavors - smoky, spicy, aggressive and bold - all the tastes and aromas that I am known for. It's a multi-cultural mix and a more broad sense and style of cooking than anything I have done in the past.

Legendary Chef Stephan Pyles introduces New Millenium Southwestern Cuisine - a global tapestry of tastes, flavors, aromas and textures from Texas, South America, Spain, the Middle East and the Mediterranean. All foods, including breads, are prepared on-site with an emphasis on organics and freshness.


Menu items are subject to change based on seasonal availability.



Dinner


An innovative array of appetizers, soups, salads, entrées and desserts. Includes creative new recipes, plus several of Chef Pyles' much-asked-for favorites, updated with a new millennium twist.



Ceviche Bar


Ceviches with unusual ingredients and flavors indigenous to South America, Spain, the Middle East and the Mediterranean. Also on the menu - flat breads, pizzas, salads and selections from our raw bar. Dinner service only.



Lunch


An inspired selection of sandwiches, salads and main courses specially created for lunch by Chef Pyles.

Fuego Sample


A 15 course tasting menu, relying heavily on seasonal, locally produced ingredients prepared in the wood-burning oven as well as with modern cooking techniques.



Tasting Menu


A six course tasting menu. Seventy five dollars per person, or one hundred and five dollars with wine pairings.



Restaurant Week


Enjoy a fabulous three-course dinner August 13th - September 1st for just $35 per person. Seven dollars of each prix fixe dinner purchased is donated to charity.
